Raw Cheesecake Recipie
Here is a perfect example of how you can substitute almost anything when you need to make a last minute healthy something, all raw food ingredients, no dairy, no sugar, or gluten and totally guilt free.
- 2 cups of nut or nuts of choice (I used a bit of everything here...goji's, cashews, almonds, macadamia)
- 3 pitted dates
- 3 tsp of cinnamon
- 1/2 cup of cacao
- 1 1/2 cup of unsalted raw cashews, soaked for 3 hours
- 1/4 cup coconut oil
- 1/2 fresh lemon juiced
- 4 tbsp of raw honey
- 1 banana
- 1 pinch of himalayan salt
- 4 to 6 passionfruit (Replace this with anything you like... strawberries, mango, blueberries etc.)
1 - Blend dry nuts, dates, cinnamon, 1 tbsp of honey, cacao + 1 pinch of salt in your thermomix or similar powerful food processor until you make a crumbly base
2 - Place the contents into your cake tray and press crumbs down firmly with your hands until it's all evened out. If you like, also place crumbs around the inside of the tray.
3 - Back to the food processor, blend the remaining ingredients (drain the cashews) until you get the desired smooth consistency of "cream cheese"
4 - Pour this creamy mixture evenly into your cake tray on top of your crust base
5 - Finally, add the passionfruit (or fruit of choice) on top (this is where I kind of blew it... passionfruit is quite runny. Halfway through this step I realised I was drowning my beloved cake, so I poured all the passionfruit contents together into a glass then strained the liquid out so I was just left with pulp)
6 - Freeze for a minimum of an hour before serving
